Happy Mother's Day!

Us!
Fenway! A Frank with mustard! The Fam!  Jon Lester striking out 15 players - his career high!  The Red Sox winning the game last Saturday over the A's!  A very sweet day!!!  

It's always great to go to Fenway Park in Boston for a Red Sox game.  A road trip east on the Mass Pike and then the T ride from Riverside Station into Boston.

I know that I celebrated Mother's Day a week early!  Our 2 sons, our 2 daughters (in- law) & 2 grandsons enjoyed chatting it up and munching during the game!  Is there any better food to enjoy at a ball park than Franks & pretzels during the game???

I wish all mothers a special day this weekend!  Our younger son did not know when he purchased all of our tickets during the winter that it would be an extra special day last Saturday!  :)

FuN Day

On a whole we all hopefully try to eat balanced meals each day.  There are exceptions to those well planned meals!  Saturday was definitely an exceptional day... in more ways than one.  Blueberry Buttermilk Pancakes that were defrosted/ heated in the microwave made for a delicious nutritious filling easy breakfast.  My family was on our way to Fenway Park!  My younger son had planned this gift for all of us.

Driving to Riverside in the eastern part of my state to park the car, riding the T into Boston and then walking the short distance to the game from the T stop is all part of the FuN.  Then, nothing beats eating a Fenway Frank while watching the Red Sox!  It was all part of the great Mother's Day weekend!  Chillin' with my daughter-in-law and the men in the fam while watching the game!  Woohoo!  FuN!

Blueberry Oatmeal Pancakes

Pancakes are definitely a fave breakfast here!  After enjoying them for breakfast, there are always extras.  Storing these delicious extra pancakes in the freezer to locate on another busy AM is a great plus!  Who has time to make pancakes every time a family member dreams of them for breakfast???

***After the extra pancakes cool, place each in a sandwich bag.  Then, place bagged pancake stacks into a Ziploc Freezer Bag.  Into the freezer they go for other mornings!

Just as my DH & I have our individual fave baseball teams (that Red Sox vs. Yankees dilemma) we are partial to specific pancakes.  Me - I really like Awesome Oatmeal Pancakes - light, full of fiber, buttermilk, nutmeg & cinnamon.  I like anything containing Oats.  My DH would much rather dine on Blueberry Buttermilk Pancakes - light, containing blueberries, buttermilk, nutmeg & cinnamon.  Yes, just like the photo in my header, only just not a plateful at once.


Earlier this week there was a little compromise going on...Blueberry Oatmeal Pancakes.  It was another take on this 2-step Oatmeal Pancake!  This AM two frozen pancakes/person were placed on plates and popped into the microwave.  An easy quick nutritious breakfast on a chilly busy AM.


***The Oats soften in the Buttermilk overnight.  Makes a light pancake!  Yummy! 

Blueberry Oatmeal Pancakes

Ingredients:

2 Cups Old-Fashioned Oats
2 Cups Fat Free/Low Fat Buttermilk
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
*******
1 Cup Fat Free/Low Fat Buttermilk - use the next morning
1/2 Cup Flour
2 Tablespoons Sugar
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 Egg + 2 Egg Whites, slightly beaten
4 Tablespoons Olive Oil (for sauteing & baking)
And Blueberries - defrosted or fresh

Method:
  1. Combine Oats, Cinnamon & Nutmeg.  Add Buttermilk, stir well.
  2. Cover & refrigerate overnight.
  3. Next morning - add additional Buttermilk, stir.
  4. In a separate bowl stir Flour, Sugar, Baking Soda & Baking Powder.
  5. Add to Oats mixture.
  6. Add Egg + Egg Whites & Olive Oil.
  7. Stir all, adding small amount of Buttermilk if needed.
  8. Pour 1/4 cup portions on heated non-stick griddle.
  9. Add 10- 12 Blueberries to portion on griddle.
  10. When brown, flip over and cook other side.
These pancakes are absolutely delicious!  Full of fiber!  And filled with Blueberries!

Blueberry or Oatmeal???

As the saying goes, "Variety is the spice of life."  It's also quite amusing at times.  Unless there is a blizzard, an ice storm or a heat wave (like currently here in New England) my hubby & I take a daily walk.  The exercise is important for health and it's a great way to greet our neighbors as we move along.  There is always time for a friendly, "Hi!"

Baseball caps add protection from the sun, so it is not unusual for us to wear our favs.  However, at first not all of our neighbors realized that we cheer on rival baseball teams.  Yup, it the Red Sox and the Yankees.  It's comical when suddenly an individual will discover this fact.  :)  Unfortunately, my team has had many injuries this season...

This past weekend our sons & families were in for a family visit/neighborhood Get Together.  Saturday AM arrived very quickly with many last minute preparations.  Hearty Pancakes that have been prepared, ready and waiting in our freezer always work so well for quick breakfasts.  Earlier in the week a quart of Fat Free Buttermilk was in my fridge.  A dilemna - which Pancake to make - Blueberry Buttermilk or Oatmeal with Strawberry Topping?  You guessed it -  my hubby enjoys the Blueberry and I am so partial to anything containing oats.  Our son likes both Strawberries & Blueberries.  The last couple of batches of Pancakes this summer I've made Blueberry Buttermilk, so this time Awesome Oatmeal Pancakes with defrosted Strawberry Topping it was.

Much to my surprise, our son added his own touch to his breakfast ...

There always is a canister of Reddi-wip on the top shelf of our fridge.  Just like the ole' days!  :)  This week located next to the Reddi-wip is a new quart of Fat Free Buttermilk!
