Easy and delicious!

Yum! There are 2 servings left of Creamy Cheesy Pie in our fridge. Yes!! This weekend we had a taste of 90° F temperatures when both Saturday and Sunday were in the low 90°'s.  After listening to our weather forecasters, it was the perfect time to make a Creamy Cheesy Pie to enjoy after dinner. My mother- in- law introduced me to this very tasty treat. After she shared her recipe so many years ago, I was so surprised how little time it took to prepare.

It is really easy to prepare, too! There are 4 ingredients here. That is unless you also use 1% fat milk like we do. In that case 1 Tablespoon powdered milk is also added into the pot before preparing the pudding mix.

Before serving a slice of this delicious pie, I spread a small amount of Freezer Jam on top. Oh, it will be the newly made Strawberry Flavored Freezer Jam! Then a squirt of Reddi-wip whipped cream tops it off.

It's the season of local strawberries!  Nothing beats purchasing one, two or many quarts of these delicious juicy berries when the local crop is ready.  Yesterday, for me, it was many quarts.  No, we were not planning on eating all of them in the next few days.  I had plans!  Well, I have plans for strawberries every year.  Some were prepped for our freezer and 3 quarts were used today to make Strawberry Freezer Jam.  That is also another tradition with me.  Freezer Jam really makes itself while sitting undisturbed on a counter or in my case, our dining room table, for 24 hours.  Then, the Freezer Jams are placed in the freezer.

Strawberries, Sugar, Lemon Juice and Certo (liquid pectin) are the needed ingredients.  Clean freezer containers are needed, also.  So many years ago I made Strawberry Jams by stirring the mixture in a pot on the stove.  Usually, it was a hot day, but the jam was so delicious, it was worth it.  Then, I learned about Freezer Jams.  I really liked the idea, because after reading the directions it looked so easy.  That year I made one batch. It was easy to prep and it tasted so delicious!!  That was over 40 years ago!! 

To make one batch you will need 1 quart of fresh Strawberries!  The local strawberries are so good when prepping Strawberry Freezer Jam.  For more instructions and hints click here to read an older post about Freezer Jam.  It is worth the extra click!  Then, make a batch!

Pork Fried Rice

We enjoy eating Pork Fried Rice.  In the past it was a side dish whenever we were in the mood while ordering from our fave Chinese restaurant.  Well, not anymore. It comes together so quickly when you have the ingredients on hand.

Either baked in the oven or grilled, we also enjoy Pork Tenderloin!  There are always a few slices left in the serving dish after dinner.  If there is one thing that I learned at the start of the pandemic it was-  a small amount of any food can be incorporated into another delicious dish on another evening.  This is the case with those extra slices of baked/ grilled Pork Tenderloin.

Rice is another ingredient in this dish, so whenever I make this dish, I start the Rice first.  I always make my whole recipe and later freeze the extra cooled Rice not needed at the time in a labelled/ dated freezer bag.  It's placed in my freezer ready to use in the future.  Click here for Rice Recipe
***Lately, instead of using the chicken broth I have been using only cold water

Pork Fried Rice
Serves 2- 3 people 

Ingredients:
A few slices of Baked/ Grilled Pork Tenderloin
1 and 1/4 Cups Prepared White Rice
2 Whole Eggs
2 teaspoons Olive Oil for sauteing/ baking
3/4 Cup frozen Peas
4- 6 teaspoons Soy Sauce- I use low sodium.

Method:

  1. Prepare Rice.
  2. Cut Baked/ Grilled Pork Tenderloin slices into small pieces, set aside.
  3. Scramble 2 Whole Eggs, set aside.
  4. Add 2 teaspoons Olive Oil for sauteing/ baking to large skillet. Heat.
  5. Remove skillet from heat and place cooked/ prepared Rice in large skillet.
  6. Heat Rice by stirring.
  7. Add frozen Peas and combine.
  8. Add Soy Sauce to skillet and combine all. 
  9. Add Pork Tenderloin pieces and Scrambled Eggs and combine everything.
  10. Heat all thoroughly and serve when Peas are tender.

When you have any extra slices of the Pork Tenderloin after dinner, this is a great meal to prepare for Part II. It is easy and it is also delicious!

~Early June~

Gardening in early June

June brings more color to our yard and it's great to see! The Knockout Rose buds are beginning to open. First, there was one flower and now there are three. So many more buds are visible!

Another great surprise was the Zinnia seeds began to sprout.  That is always a great success, because the seeds planted were harvested from last year's bountiful colorful crop. Every day they will get a bit bigger.

June is a great month!
