Pork Fried Rice

We enjoy eating Pork Fried Rice.  In the past it was a side dish whenever we were in the mood while ordering from our fave Chinese restaurant.  Well, not anymore. It comes together so quickly when you have the ingredients on hand.

Either baked in the oven or grilled, we also enjoy Pork Tenderloin!  There are always a few slices left in the serving dish after dinner.  If there is one thing that I learned at the start of the pandemic it was-  a small amount of any food can be incorporated into another delicious dish on another evening.  This is the case with those extra slices of baked/ grilled Pork Tenderloin.

Rice is another ingredient in this dish, so whenever I make this dish, I start the Rice first.  I always make my whole recipe and later freeze the extra cooled Rice not needed at the time in a labelled/ dated freezer bag.  It's placed in my freezer ready to use in the future.  Click here for Rice Recipe
***Lately, instead of using the chicken broth I have been using only cold water

Pork Fried Rice
Serves 2- 3 people 

Ingredients:
A few slices of Baked/ Grilled Pork Tenderloin
1 and 1/4 Cups Prepared White Rice
2 Whole Eggs
2 teaspoons Olive Oil for sauteing/ baking
3/4 Cup frozen Peas
4- 6 teaspoons Soy Sauce- I use low sodium.

Method:

  1. Prepare Rice.
  2. Cut Baked/ Grilled Pork Tenderloin slices into small pieces, set aside.
  3. Scramble 2 Whole Eggs, set aside.
  4. Add 2 teaspoons Olive Oil for sauteing/ baking to large skillet. Heat.
  5. Remove skillet from heat and place cooked/ prepared Rice in large skillet.
  6. Heat Rice by stirring.
  7. Add frozen Peas and combine.
  8. Add Soy Sauce to skillet and combine all. 
  9. Add Pork Tenderloin pieces and Scrambled Eggs and combine everything.
  10. Heat all thoroughly and serve when Peas are tender.

When you have any extra slices of the Pork Tenderloin after dinner, this is a great meal to prepare for Part II. It is easy and it is also delicious!

Grilled Pork Tenderloin Flatbread

Grilled Pork Tenderloin Flatbread!
There had been just a few slices of grilled Pork Tenderloin on the serving platter after dinner.  Just a few was just enough!  Two days quickly flew by.  Suddenly, it was time to prepare another dinner.  I knew that on the second shelf of our fridge there was a container of Fat Free Ricotta cheese.  The packaged Flatbreads were located and fresh zucchini were ready to saute, also.  I envisioned another dinner- Grilled Pork Tenderloin Flatbread.  Yum!

So, 2 nights later dinner was quick and easy!   The 2 zucchini were sliced and sauteend on the stove.  Then, the FuN part started.  On a large cookie pan 3 Flatbreads were placed in a 375°F oven for 2 Minutes.  After removing from oven the layering starts.

Drizzling a little barbeque sauce (that has been diluted with a little water) over the top before adding the shredded cheese really adds that extra pizzazz.  If you have a few slices of grilled Pork Tenderloin remaining after dinner some night, save it to make Grilled Pork Tenderloin Flatbread for dinner.

Ingredients: 

Flatbreads- I use 3.
2 Zucchini-  sliced, then sauteed in Olive Oil with Basil + Oregano
1/4 Cup Ricotta Cheese (can be Fat Free)- for each flatbread
Grilled Pork Tenderloin- cut into small chunks
4 teaspoons BBQ Sauce
1 teaspoon Water
Shredded Cheese- desired amount

Method:
  1. Place Flatbreads on a large cookie pan.  Bake for 2 Minutes in a preheated 375°F oven. 
  2. Remove from oven.
  3. Slice and saute Zucchini in Olive Oil with Basil + Oregano.
  4. Place on top of Flatbreads.
  5. Cut grilled Pork Tenderloin into chunks.  Place on flatbreads.
  6. In a small container mix 4 teaspoons BBQ Sauce with 1 teaspoon water.
  7. Drizzle BBQ Sauce/ Water mixture on top of Flatbreads.
  8. Sprinkle desired amount of Shredded Cheese on top.
  9. Bake for 5 Minutes in 375°F oven.
  10.  Remove from oven.
  11. Cut each Flatbread into 3 or 4 slices.
  12. Cover & refrigerate any leftovers.
Ordering take- out pizza is easy, but after enjoying these Flatbreads, I would rather have this for dinner!  It is not difficult to prepare.  Just prepare all of the ingredients first.

~Flatbread Pizza~

BBQ Pork Tenderloin Flatbreads
with Roasted Asparagus
Spring!  Asparagus! Flatbread Pizza!  Oh yes!  What a great combination!

A couple of months ago my DH & I were looking at the menu in a New Jersey hotel dining room- famished.  I wanted to order something I'd never tasted.  That's something I always enjoy doing.  When I return home I like to prepare a new dish that's so tasty.  There on the menu was "Flatbread Pizza".  The description of the ingredients sounded so appetizing & I was so hungry!  Oh, it was so good!     

Three weeks ago, a grocery store in my area started carrying packaged flatbread for pizza.  O.K., that got my attention!  Now, I've prepared Flatbread Pizza twice in the past 3 weeks.  Forget Friday night pizza!

These are great!  They are so easy to prepare!  The Directions are on the package.  With the Flatbreads I use, they are placed on a baking sheet & baked for 2 minutes in a 375°F oven.  Add toppings & then return to the oven & bake again for 5 Minutes in a 375°F oven

It's Asparagus time, so roasting Asparagus that's coated with Olive Oil for baking & sauteing & also Parmesan cheese is a great veggie when making these.  We like White Pizza, so a coating of Ricotta Cheese is a great base.    

With the first Flatbreads, BBQed Pork Tenderloin chunks, Roasted Asparagus & fresh Spinach were placed on a coating of Ricotta Cheese.  Top with shredded Mozzarella/ Cheddar! 

We enjoyed the taste of  Veggie Dream Flatbreads the second time.  Roasted Asparagus & Roasted Summer Squash along with fresh Spinach were placed on the Ricotta.

Useful Hints
:

  • Before adding toppings, I spread a little Olive Oil for baking & sauteing on each baked Flatbread.  Then, add & spread Ricotta Cheese on top. 
  • For both varieties make a drizzle of 1 teaspoon Water with 4 teaspoons of BBQ SauceCombine & then drizzle over the top of each Flatbread just before sprinkling on the shredded Cheddar/ Mozzarella Cheese.  Bake.  This gives it a great tang!

Grilled Pork Tenderloin

Sometimes there's just no foodie photo!  What??!!  You may think- no foodie photo.  That is true- no foodie photo.  Dinner happened so quickly.  Instead, here's a photo taken from our driveway.  Spring is here in great splendor with flowering bushes & colorful leaves popping out! 

Today was a sunny warm day & our thermometer read 80°F.  Such comfy weather!  Definitely grilling time!  A 1 Lb. Pork Tenderloin had been purchased yesterday & an opened bottle of BBQ sauce was in the fridge.  Dinner was quick & easy & yummy.  Bowties n Cheese, a fruit salad & slices of tender, moist, yummy grilled Pork Tenderloin.

I like Pork cooked well done (no pink), so this method of grilling a 1 Lb. piece works so well for me.

Grilled Pork Tenderloin

Ingredients:
1 Lb. Pork Tenderloin
1/3 Cup BBQ Sauce

Method:
    1. Heat Grill.
    2. Rinse Pork Tenderloin under cold running water.
    3. Place on a large platter.
    4. Pour about 1/3 Cup BBQ Sauce on top.
    5. Turn Pork Tenderloin over until totally coated with Sauce.
    6. Grill on one side for 14 Minutes.
    7. Using grilling tongs, turn Tenderloin over & grill other side until done.  With our grill a Medium Heat for total of 27- 29 Minutes.
    8. Remove from Grill & place on a clean plate.
    9. Let sit for 5 Minutes.
    10. Cut into slices on diagonal & serve.
    While the Pork Tenderloin was grilling, the Pasta was cooking & the salad was prepared.  Quickly dinner was ready.  It was after dinner I realized there was no foodie photo to share.
