There are times when fixing breakfast "in a jiffy" on the weekend works great! On Saturday AM, it was also with a Jiffy - with a box of Jiffy Corn Muffin Mix! Watching the Boston College basketball game at noon on NESN really sped things up quite a bit here. Hearty, tasty and easy was needed for breakfast, so we could do some errands and also be ready to watch that noon time start. :)
Jiffy Corn Muffins are a family fave here, so I usually have a box or two of the mix in my pantry. Growing up these muffins were a staple, but we never tasted the pancakes. However, located on the side of the box are the directions. For many years I never glanced at them and I really don't know why. Now, I do prepare these pancakes, but always substitute Olive Oil, 2 Egg Whites and Soy Milk when whipping them up. For a great tasting cornmeal pancake I also add in 1/4 teaspoon Cinnamon and 1/4 teaspoon Nutmeg to the batter. In the above photo the light colored pancakes have little bubbles and are ready to flip over.
The extras (shown below) are now in my freezer for another quick breakfast this week.
The game was great!

What’s for Breakfast?
This past week just zipped by. Each day was full of activities, so every evening before dinnertime I would open my freezer door to locate a previously prepared dinner. It was great finding labeled and dated Ziploc containers of previously prepared food that could be defrosted/reheated in my microwave. But that can only happen for so long. This morning’s breakfast needed some attention, because a visit to the grocery store was really necessary.
Well, two overripe Bananas were sitting in the fruit bowl, but you know my thoughts about eating Bananas first thing in the morn. That is, unless the Bananas are totally combined with other ingredients like in hot cereal. Today is Sunday – so no hot cereal today.
Looking on my counter and in the fridge, a partial loaf of Soft Oatmeal Bread, Soy Milk and Eggs were available. That could only mean one thing – soft tasty French Toast. By adding a little Cinnamon and a little Nutmeg to the Egg and Milk mixture Breakfast tasted yummy!
I was quickly able to take a photo – before my hubby devoured his. Almost missed that opportunity! :)
A trip to the grocery store came later in the day! Soy Milk, Eggs and Bread were on the list, too!
Now, the Bananas … I did use them while baking today. That is the next post. Stay tuned…
French Toast
Ingredients:
2 Whole Eggs
3 Egg Whites
1 Cup Milk (Soy or 1% Milk)
¼ tsp. Cinnamon + ¼ tsp. Nutmeg – as desired
Sliced Bread – whatever is available :)
Method:
1. Place Whole Eggs and Egg Whites in a rectangular container and beat with a fork. (I use a 1 & ½ Qt. CorningWare container.)
2. While beating mixture add in Milk and continue beating to combine.
3. Add Cinnamon + Nutmeg and beat with fork.
4. Heat non-stick griddle or skillet on medium heat.
5. Dunk each bread slice in mixture coating both sides and then place on the griddle/skillet. (Two or three browning at once.)
6. The underside will be golden brown when it is time to turn the bread slice over with a spatula.
7. Turn over and brown other side.
8. Enjoy with Maple Syrup!

Fantastic French Toast!
The weekend is approaching! Usually on Saturday morning, we enjoy a breakfast of Pancakes or French Toast. Now, easy is really good! I’ve gotten in the habit of using cinnamon bread while preparing Fantastic French Toast. No cinnamon and no sugar to add into the egg/milk mixture. How easy can that be? I only need to remember to purchase the cinnamon bread. I also use Soy Milk. The Vanilla flavored and the Original flavored Soy is always found in my fridge. Either can be used or 1% Milk.Preparing Fantastic French Toast (click here for recipe card) with Pepperidge Farm Cinnamon Bread is great! After dining on Sausage Soup last week (portions are in my freezer, too), the balance is preparing other foods with less cholesterol. I use less whole eggs and many egg whites when making this yummy breakfast. Keep in mind that two egg whites equal one whole egg when cooking.
This is one of our favorite breakfasts! Ah, and the extra slices are stored in our freezer for more scrumptious breakfasts on busy mornings.
The recipe is below:

7. Serve with Maple Syrup.
Over the years my family has enjoyed this breakfast so many times. One year my younger son had a great suggestion – use Pepperidge Farm Cinnamon Raisin Bread rather than plain cinnamon bread. Ah, that is so tasty!

Fantastic French Toast

Last Friday morning I envisioned eating French Toast topped with maple syrup for breakfast. Now, I was not planning on taking the milk and the eggs from our fridge to make this breakfast. My plan included the simple act of searching in my freezer to locate Raisin Cinnamon French Toast and heating it in our microwave. Well, that was not in the cards! An additional item was quickly added to my grocery list – Pepperidge Farm Raisin Cinnamon Bread.
On Saturday morning the milk and the eggs were located in our fridge and the griddle was heated. Golden, delicious, sweet Fantastic French Toast was on our breakfast table. Yes, there were extra pieces. After they cooled, each piece was placed in a sandwich bag. The sandwich bags were then placed in a Ziploc Freezer Bag, labelled and stored in the freezer.
***For many years I prepared this scrumptious breakfast using Cinnamon Bread. However, one day my son suggested I just try making it with Raisin Cinnamon Bread. Raisins are tops in my family, as you can guess. I used the bread containing the raisins and found it top notch French Toast. From then on Raisin Cinnamon Bread it was!
There will be another busy morning when I will search for French Toast in our freezer. On that morning the microwave will help with another very tasty breakfast. Yummy!

Fantastic French Toast
At breakfast time on Saturday morning the aroma of cinnamon filled my kitchen. To my family it was a clue that we would be enjoying Fantastic French Toast (click on link). Preparing French Toast with Pepperidge Farm Cinnamon Bread is very easy. Keeping in mind that two egg whites equals one whole egg when cooking, I prepared a breakfast with less cholesterol. It is also one of our favorites.
After we had eaten, the extra slices of delicious Fantastic French Toast were packaged and placed in our freezer. On a busier morning they will be reheated in the microwave.
One year my son had a wonderful suggestion – use Pepperidge Farm Cinnamon Raisin Bread rather than plain cinnamon bread. I used the idea. Ah, that is so tasty!
