First Anniversary – Wow!

Today is February 16, 2009! There is an expression “time flies when you’re having fun”. It certainly does! One year ago today I posted my first entry (click on bolded words for link) on my A Tasty Thought by JG Blog.

How many of you have prepared Baked “Tempting Tenderloin” for dinner? Here in Western Massachusetts do you purchase the Pork Tenderloin when the Big Y has the Buy 1, Get 1 Special? I did one year ago and I continue to follow that habit these days.

Over the past year here in New England I have enjoyed sharing easy, delicious, favorite recipes with all of you from all over the world.

Simply Delicious!


On Valentine’s Day serving a dessert that is delicious and also red in color is so appropriate! No matter what tasty dinner your family will be eating, SIMPLY DELICIOUS (click on bolded words for recipe card) is a great dessert for the end of your meal. These three ingredients – one pkg. of Strawberry Gelatin, one cup of Vanilla Ice Cream and one cup of Hot Water make two servings. For four people double the recipe. This very easy and scrumptious dessert is a favorite with children of all ages!

Before serving, place a dollop of whipped cream on top!

Cheesy Veggie Chicken

This winter certainly has been the season of snowflakes! Using the snowblower and the snow shovels has become a habit. Around dinnertime we are always famished! After opening the refrigerator door a welcome sight is finding one or two “leftover” foods from the previous two days. It is even better when they can be used together to prepare another easy, delicious, nutritious, filling dinner.

Cheesy Veggie Chicken (click on the words for printable recipe card) is made with leftover baked/roasted chicken, frozen broccoli & cauliflower, Healthy Request Cream of Mushroom Soup, milk and taco cheese. Last night this easy dinner was prepared and placed in the microwave to cook and we certainly enjoyed it!

The pieces of roasted chicken were located in our fridge. There was also a small amount of rice. Both of these “leftovers” were combined with other ingredients to make a scrumptious dinner. The addition of the rice was really nice!

A Warm Kitchen & a Delicious Dinner!

Oh, it certainly is invigorating here in Western Massachusetts!!! Hats, gloves or mittens, boots and warm coats are worn every time we step outside of our homes. During this chilly weather I use my oven to prepare dinner whenever possible. A warm kitchen in the winter is the best! Tonight’s scrumptious dinner required a preheated 425°F oven. Only one pan was needed, because Baked “Tempting Tenderloin” and Zesty Carrots shared a large cookie pan. With the addition of microwaved “baked” potatoes and fat free sour cream, dinner was easy to prepare and tasted so good!

Preparing dinner took little time. After getting the cookie pan ready, the Pork Tenderloin was rinsed in cold water and placed in the center of the pan. I placed two Bay Leaves under the Pork, drizzled the Olive Oil on top and topped it with about 1 tsp. of dried Rosemary leaves. The prepared Carrots were placed around the pork. Then, the meat (1 and 1/4 lbs.) and vegetables (1 lb.) were baked for 45 minutes in a
425°F oven.

We never have any Zesty Carrots left after dinner. However, the two extra slices of Tempting Tenderloin will be cut into pieces at lunchtime tomorrow and placed in a Rosemary Flavored Wrap along with taco cheese for my husband to devour.

Do you purchase Pork Tenderloin, as I do, when your grocery store has the Buy One Get One Special? There are many ways to prepare it and the recipe above is one method that results is a very tasty dinner!

Chicken Florentine a la Slow Cooker

As we settle into our routines after enjoying a chilly, snowy, fun filled Christmas Holiday Season I always enjoy preparing an easy and nutritious dinner that does not require much fuss. Quite often that is my opportunity to use my West Bend Slow Cooker. This is a great way to start the new year! Vegetables and meat/chicken are very tender and full of flavor after simmering for a period of time in the Slow Cooker's Pot.
Two evenings ago Chicken Florentine bubbled in the cooking pot of my Slow Cooker and emitted inviting aromas while this delicious dinner was cooking. The preparation was easy!
  1. Wash & Cut (2) Baking Potatoes with skins into 1” chunks.
  2. Place into Slow Cooker’s cooking pot that has been lightly sprayed with PAM.
  3. Defrost (1) 10 oz. pkg. frozen Spinach and spread on top of Potato chunks.
  4. Rinse and then place about 1 & ½ lbs. Chicken Tenderloins on top.
  5. Sprinkle about ¼ tsp. Oregano, ¼ tsp. Basil, ¼ tsp. Garlic Powder, 1 tsp. Parsley & 1 tsp. Chopped Onion on top.
  6. Add (2) Bay Leaves.
  7. Mix 1/3 Cup Water with (1) Can Cream of Mushroom (Healthy Request) Soup. Spread evenly over top.
  8. Place lid on top of the cooking pot and set temperature.
  9. Cook on #5 (High) – 1 Hour. Then reduce to #3 for 2 Hours.
    Enjoy!!!
    *** Sometimes we do have leftovers, which can be served again - on a bed of No Yolk Noodles or Penne.
    A Slow Cooker or Crock Pot makes a delicious dinner!

My family always enjoys Chicken Florentine a la Slow Cooker and now quite often I add Carrots when I prepare this easy tasty dinner.  A 1 lb. bag of Baby Carrots (washed) is placed in the Slow Cooker's pot, first.  Then, I add the Chicken Tenderloins and then the remaining ingredients.  I do not place meat/poultry on the bottom (but on the second layer), because in the past I've scorched the meat/poultry in my cooker's pot if I do.
Sometimes, I do not add the Potatoes.

Any cooled extra portions can be placed in Ziploc Containers and frozen.  This makes for a wonderful dinner when defrosted after a busy day.  I hope that you & your family enjoy this easy delicious dinner as much as my family does!  :)

Merry Christmas & Happy Holidays!

Over the years my husband and my two sons have always given me honest input regarding any food that I have prepared. A very long time ago, it is now decades, Cranorange Coffee Cake (click on link for recipe card) became our favorite dessert after our Christmas dinner. I had acquired two recipes for this moisty, flavorful, colorful cake. One recipe used Cran/Orange Relish and the other recipe used Whole Berry Cranberry Sauce.

I have learned that the best time to purchase the Cran/Orange Relish is during the month of November. Grocery stores do not stock a large inventory. However, if this particular item is not located, there is always Plan B. Use the Whole Berry Cranberry Sauce with an addition of 2 tsp. of Orange Extract stirred in before using.

Currently, the cake that we will enjoy on Christmas Day is baking in my oven. After cooling, it will be wrapped in heavy-duty foil and placed in the freezer. This scrumptious cake is moister if it has been frozen and defrosted before serving. After defrosting tomorrow night, the almond flavored icing will be drizzled on top.

A slice of Cranorange Coffee Cake will be enjoyed with a scoop of vanilla ice cream on the side. This is also a delicious cake to serve to your guests on New Year’s Day!

Snickerdoodles

The bottom of my family’s cookie container is reached quickly whenever our container is filled with Snickerdoodles. (Click on link for recipe.) This yummy cookie with a cinnamon topping is mouth-watering! One batch yields about 3 dozen scrumptious treats. Snickerdoodles are a great dessert to place on a Christmas/Holiday buffet dessert table.

Bake these cookies a day or two before you plan to share them, because they do not freeze well. Consider baking an extra batch for your family to enjoy! Otherwise, place the baked cookies in a spot where family members will not find them easily. Once they are located the cookies will be devoured and enjoyed!

Snickerdoodles can also be a gift from your kitchen mailed (click on links for hints) to a family member/friend that lives a distance from you. These homemade treats are easy to make and taste absolutely delicious!
