Grilling the Swordfish

So often we think back and say, "What a difference a week makes!"  This surely has been the case on the east coast of our country this past week!  Irene changed a bit while moving up and sure left her mark!  Our neighbors to the west and to the north here in MA are dealing with washed out roads and flooding.  Our relatives in CT are still without power.  The national news is covering the affected states.  It's been a most challenging year of weather and one we will not easily forget!

Continually our outdoor grill is used.  Tonight, Grilled Swordfish made for an easy and delicious dinner!  Our local grocery store, Big Y, has a wonderful fresh Seafood Dept.  There's a special on fresh Swordfish this week, so it was an obvious choice for dinner.  Local Green Beans and a microwaved "Baked Potato" also tasted yummy! 

This fish hold its own while grilling, so no grilling basket is needed.  No fancy sauce (with added calories) accenting the fish is needed, either!  Plain, simple and delicious! 

Grilled Swordfish

Ingredients:
1 lb. Swordfish Steak
Olive Oil
Paprika - about 2 shakes from the bottle.

Method:
  1. Preheat outdoor grill.
  2. Pour about 2 Tablespoons Olive Oil on a large dish.
  3. Sprinkle a little Paprika on top of Olive Oil.
  4. Rinse Swordfish Steak under cold running water.
  5. Place on Olive Oil/Paprika in dish.
  6. Turn Swordfish over to coat other side.
  7. Place on heated grill and put grill cover down.
  8. Grill for 7 minutes and 30 seconds.  The fish is turned over one time while grilling.
  9. Grill other side for 7 minutes and 30 seconds.
*** The amount of needed grilling time depends on the size of the piece of Swordfish Steak and the grill.  Using our gas grill turned up 3/4 heat a 1 lb. piece requires 7 minutes and 30 seconds on each side.  The cover is down while grilling.

Grilled fish tastes great!  Before we know it the season will change and the grill will not be used.  I'll be baking fish for dinner and the variety will change.   :)

Grilled Swordfish

Ever since my DH & I enjoyed the absolutely delicious Swordfish Dinner while dining at a quaint restaurant in Maine many years ago, Grilled Swordfish has been one of our favorites. This week the seafood dept. in our grocery store has fresh wild Swordfish. No fancy topping nor sauce is needed. A coating of Olive Oil and Paprika before grilling is simple and is the best! Yum!


Tonight the grill was heated. Dinner took about 15 minutes to prepare. Microwaved “Baked” Potatoes and a healthy veggie salad were ready quickly. Grilled fish is so good! It is one of the great foods of summer!

Grilled Swordfish

1. Pour about 2 TBS. of Olive Oil on a large dish.
2. Sprinkle a little Paprika on top.
3. Rinse the Swordfish Steak under cold running water.
4. Then, place it on the Olive Oil/Paprika.
5. Turn the Swordfish over to coat the other side.
6. Place fish on the hot grill.
7. The fish is turned over one time during the grilling process.

** The amount of needed grilling time depends on the size of the piece of Swordfish and the grill. A 1 lb. piece requires about 5 minutes and 30 seconds on each side.

**We do not use a Grilling Basket while grilling Swordfish.

Tomorrow’s dinner will be prepared inside. Raindrops are predicted. It’s great to use the Grill whenever possible!

Blue Skies and Grilled Swordfish!


Today, we are enjoying a very comfortable day here in Western Massachusetts! The Peachy Craisin Crisp is baking in my oven and tonight our outdoor grill will be used! Ahhh, this week the seafood department in my local grocery store has a special on fresh “wild” Swordfish. So … tonight for dinner we will enjoy eating Grilled Swordfish, a microwaved “baked” potato and a fresh garden salad. Guess what we are having for dessert?

The preparation for Grilled Swordfish is very easy, the grilling time for the fish is not long, and the results are so yummy!

Grilled Swordfish

1 lb. Swordfish Fillet (serves 2)

1. On a large dish pour about 2 Tablespoons Olive Oil.
2. Sprinkle a little Paprika on top.
3. After rinsing Swordfish Fillet in running cold water, place on the Olive Oil/Paprika.
4. Turn the fish over to coat the other side.
5. Place fish on heated Grill.
6. Grill about 5 – 7 minutes on each side, until fish flakes easily with a fork. Grilling Time depends on size & thickness of fillet.

Seafood tastes great! Preparing it at home is the best! Using the outdoor grill just tops it off!

Easy Cheesy Noodles - A Side Dish for Grilled Haddock


The warm sun is shining and the grass is growing here in the Pioneer Valley. Our outdoor grill was used at dinnertime this weekend preparing easy tasty main dishes of grilled fish. Many of you have also been grilling haddock and swordfish. What better time to enjoy them than when our local grocery store offers special sales for the current week?

One very simple, yet tasty side dish for grilled fish is Easy Cheesy Noodles. It is a favorite from my childhood. However, now I use “No Yolks” Extra Broad Noodles. Egg noodles can be substituted. I cook half of the package of the dry noodles when preparing this dish.

This yummy fare is very easy to prepare!



1. Cook the noodles (desired amount) according to the package directions.
2. After draining the cooked noodles, place them in the cooking pot.
3. Add 2 TBS. Butter/Margarine, a dash of pepper and stir.
4. Then add about 8 oz. Cottage Cheese to the hot noodles.
5. Stir and then cover until serving.
6. Reheating quickly before serving may be needed.

The cottage cheese will be quickly heated and some may melt.

***For a special taste use Onion & Chive Low Fat Cottage Cheese!

This side dish is so good it became a family favorite years ago. Have you tried it?

Meatless Entrees

Starting this week many of us will be eating meatless meals at least once a week. The snow remaining on our deck hinders the path to my outdoor grill. For that reason my family will not be dining on Grilled Haddock, Grilled Sockeye Salmon, or Grilled Swordfish at dinnertime. Soon our weather will be warmer in New England. However, Baked Haddock or Pan Seared Scallops will be great choices that are quick and easy to prepare for dinner.

Another family favorite is Ricotta Rollups!

Enjoy the Labor Day Weekend!

This is the weekend that reminds us fall will be approaching. Very shortly, Football, Cross Country, and Soccer will get our attention. The mornings will also be chillier.

However, this weekend we have an opportunity to enjoy a few days and use our grills at dinnertime. For my family it started last night with Grilled Swordfish. Tonight, we enjoyed Grilled Haddock along with Tangy Tortellini Salad and a fruit salad. Luscious London Broil will be enjoyed another evening over the weekend. Enjoy the remaining relaxing days of summer.

Grilled Swordfish Served at Home?

One evening many years ago we were enjoying delicious Grilled Swordfish Dinners at a charming restaurant while on vacation in Maine. The meal was so appetizing! While enjoying every bite, it occurred to me that Grilled Swordfish would be easy to prepare. It is very easy! Only Olive Oil and Paprika are needed. It requires the same method as preparing Grilled Sockeye Salmon.

Pour about 2 TBS. of Olive Oil on a large dish. Sprinkle a little Paprika on top. Rinse the Swordfish Steak under cold running water. Then, place it on the Olive Oil/Paprika. Turn the Swordfish over to coat the other side and then place it on the hot grill. The grilling basket (container) is optional. We do not use it while grilling Swordfish. The fish is turned over one time during the grilling process. The amount of needed grilling time depends on the size of the piece of Swordfish and the grill. A 1 lb. piece requires about 5 minutes and 30 seconds on each side.

Served with cold salads, dinner is ready quickly! Enjoy! Yummy!
