Grilling the Swordfish

So often we think back and say, "What a difference a week makes!"  This surely has been the case on the east coast of our country this past week!  Irene changed a bit while moving up and sure left her mark!  Our neighbors to the west and to the north here in MA are dealing with washed out roads and flooding.  Our relatives in CT are still without power.  The national news is covering the affected states.  It's been a most challenging year of weather and one we will not easily forget!

Continually our outdoor grill is used.  Tonight, Grilled Swordfish made for an easy and delicious dinner!  Our local grocery store, Big Y, has a wonderful fresh Seafood Dept.  There's a special on fresh Swordfish this week, so it was an obvious choice for dinner.  Local Green Beans and a microwaved "Baked Potato" also tasted yummy!

This fish hold its own while grilling, so no grilling basket is needed.  No fancy sauce (with added calories) accenting the fish is needed, either!  Plain, simple and delicious!

Grilled Swordfish

Ingredients:
1 lb. Swordfish Steak
Olive Oil
Paprika - about 2 shakes from the bottle.

Method:
  1. Preheat outdoor grill.
  2. Pour about 2 Tablespoons Olive Oil on a large dish.
  3. Sprinkle a little Paprika on top of Olive Oil.
  4. Rinse Swordfish Steak under cold running water.
  5. Place on Olive Oil/Paprika in dish.
  6. Turn Swordfish over to coat other side.
  7. Place on heated grill and put grill cover down.
  8. Grill for 7 minutes and 30 seconds.  The fish is turned over one time while grilling.
  9. Grill other side for 7 minutes and 30 seconds.
*** The amount of needed grilling time depends on the size of the piece of Swordfish Steak and the grill.  Using our gas grill turned up 3/4 heat a 1 lb. piece requires 7 minutes and 30 seconds on each side.  The cover is down while grilling.

Grilled fish tastes great!  Before we know it the season will change and the grill will not be used.  I'll be baking fish for dinner and the variety will change.   :)

Enjoy!
Yummy!

Summer Chicken

Summer is great!  There is so much color in our gardens.  In our front cut-out perennials and annuals flow together.  Overnight there can be a change as blossoms appear.  This just may be the last season of our current Zinnias.  Every summer I save seeds from the current year's gorgeous blossoms.  After drying the seeds and storing them during the winter they are planted in the spring.  It was a little "iffy" as to how the Zinnias would fare this year, because this is the fourth year that seeds were saved and planted from the original purchased seeds.  But all is well!  More buds are ready to blossom.

One hot afternoon this week we had a craving for Grilled Sockeye Salmon.  Well, a reasonably priced nice piece of "wild caught" Sockeye Salmon was not in the cards.  Breaded Sauteed Chicken Tenderloins quickly found their place on our dinner table that evening.  Now, there were quite a few extra pieces of tenderloins after dinner.  Needless to say, into the fridge they went.  At this time of year there usually is a large green Pepper visible every time I open our fridge's door.  The ingredients for another quick & easy colorful delicious dinner were at hand! WooHoo!

Summer Chicken

Ingredients:
About 1 Cup cut up cooked Chicken Tenderloins/Chicken
1 large Green Pepper cut into strips
2-3 Tablespoons Olive Oil
(1) can Plum Tomatoes (1 lb., 12 oz. can)
1/8 teaspoon each dried Oregano, Sweet Basil & Garlic Powder

Method:
  1. Wash Green Pepper.  Cut into strips.
  2. Saute in Olive Oil in skillet about 4-5 Minutes.
  3. Add drained Plum Tomatoes that have been cut in half.
  4. Cut cooked Chicken Tenderloins into pieces and add to skillet.
  5. Sprinkle 1/8 teaspoon Oregano, Sweet Basil & Garlic Powder over ingredients in skillet.
  6. Heat about 6-8 Minutes, until hot.  Stir occasionally.
The Chicken Tenderloins I used had been coated with Bread Crumbs and sauteed.  As the juicy Plum Tomatoes heated, the Bread Crumbs on the Chicken pieces absorbed the juice.  Dinner was so yummy!

Today we purchased the Sockeye Salmon.  I noticed the "special" in our Big Y's store flyer on Thursday.  :)

Enjoy!

Sockeye Salmon Will Be Grilled Tonight!

It’s July! It’s hot and humid outside! It’s time for fresh "wild caught” Alaskan Grilled Sockeye Salmon for dinner! My local grocery store (Big Y) is featuring this delicious, healthy, colorful fish in the Seafood Dept. Last Friday at dinnertime we enjoyed this very tasty dinner and tonight will be a repeat. Yummy!

The preparation is so easy. Neither fancy sauces nor salty additions are needed to accent the taste of this scrumptious fish. A metal grilling basket or container is needed. It prevents the fillet from dropping down into the grill. :)

Grilled Sockeye Salmon

  • Spray grilling basket (container) with PAM.
  • Heat grill.
  1. On a large dish pour about 2 TBS. Olive Oil.
  2. Sprinkle a little Paprika on top.
  3. Rinse a Salmon Fillet in running cold water, place on the Olive Oil/Paprika.
  4. Turn the fish over to coat the skin side.
  5. Place the Salmon Fillet in grilling basket on grill.
  6. Half way through, turn over and grill the other side.
  7. Enjoy!
  • The amount of needed grilling time depends on the size of the piece of salmon and the grill.
  • A 1 lb. piece requires 5 – 7 minutes on each side.
*** Note: With our grill we usually grill each side 7 minutes. The 1 lb. fillet is usually thick.

A microwaved “Baked Potato” and Sauteed Combo served along with Grilled Sockeye Salmon is a meal we enjoy often during the hot summer months. With the local Zucchini available at our roadside stands, it’s great to eat these colorful prepared fresh veggies.

This is another family favorite that I posted almost two years ago and we still enjoy this scrumptious dinner! I wait for our local grocery to have a special on this “Wild Caught” fish.

Do you/your family enjoy fish? Do you prepare it at home? Do you like Alaskan Sockeye Salmon?  It’s easy to prepare and tasty to eat!

Enjoy!
Yummy!

Grilled Swordfish

Ever since my DH & I enjoyed the absolutely delicious Swordfish Dinner while dining at a quaint restaurant in Maine many years ago, Grilled Swordfish has been one of our favorites. This week the seafood dept. in our grocery store has fresh wild Swordfish. No fancy topping nor sauce is needed. A coating of Olive Oil and Paprika before grilling is simple and is the best! Yum!

Tonight the grill was heated. Dinner took about 15 minutes to prepare. Microwaved “Baked” Potatoes and a healthy veggie salad were ready quickly. Grilled fish is so good! It is one of the great foods of summer!

Grilled Swordfish

1. Pour about 2 TBS. of Olive Oil on a large dish.
2. Sprinkle a little Paprika on top.
3. Rinse the Swordfish Steak under cold running water.
4. Then, place it on the Olive Oil/Paprika.
5. Turn the Swordfish over to coat the other side.
6. Place fish on the hot grill.
7. The fish is turned over one time during the grilling process.

** The amount of needed grilling time depends on the size of the piece of Swordfish and the grill. A 1 lb. piece requires about 5 minutes and 30 seconds on each side.

**We do not use a Grilling Basket while grilling Swordfish.

Tomorrow’s dinner will be prepared inside. Raindrops are predicted. It’s great to use the Grill whenever possible!

Enjoy!

WOW!

When the weather allows us to use our outdoor grill here in Western Massachusetts, Grilled Sockeye Salmon is one of my hubby’s and my favorite meals. Quite often we enjoy it with a microwaved “baked” potato and a veggie salad. It is delicious, nutritious and very easy to prepare. I have noticed that many of you, my readers, have clicked on my Grilled Sockeye Salmon Blog posting. Imagine my happy surprise tonight when I googled and found the following result:

Keep preparing easy nutritious delicious meals.

Enjoy Grilled Sockeye Salmon!

Meatless Entrees

Starting this week many of us will be eating meatless meals at least once a week. The snow remaining on our deck hinders the path to my outdoor grill. For that reason my family will not be dining on Grilled Haddock, Grilled Sockeye Salmon, or Grilled Swordfish at dinnertime. Soon our weather will be warmer in New England. However, Baked Haddock or Pan Seared Scallops will be great choices that are quick and easy to prepare for dinner.

Another family favorite is Ricotta Rollups!

Remember the unexpected guest?

Do you remember making plans to do something and an unexpected guest arrived at your table? This afternoon during the thunderstorm we had a most unexpected guest at our outdoor table on our deck. Suddenly, the torrential rain fell. The gusty wind blew sticks out of the trees and a very huge limb landed across our deck, outdoor grill, picnic table and chairs. Yes, it was most surprising and it happened very quickly! Fortunately, everything was fine with the exception of needing the gigantic limb removed tomorrow. Usually thunderstorms move around us in our little corner of the Pioneer Valley in Western Massachusetts. Tonight we ordered out for dinner.

For those of you who prepared Grilled Sockeye Salmon, Grilled Haddock or Pan Seared Scallops – do you have a favorite of the three recipes?

Grilled Sockeye Salmon

After toooo many humid days, it is so comfortable to be outdoors today! ;-) Wanting to spend more time outside is definitely an invitation to use the outdoor grill. Grilled Alaskan Sockeye Salmon is absolutely delicious! It does not need a fancy saucy topping, or any salty addition. The preparation is easy which is also a plus.

On a large dish pour about 2 TBS. Olive Oil. Sprinkle a little Paprika on top. After rinsing a salmon fillet in running cold water, place on the Olive Oil/Paprika. Turn the fish over to coat the side with skin. For grilling we use a metal grilling basket (container) to grill fish. By using it, no pieces fall into the grill. The amount of needed grilling time depends on the size of the piece of salmon and the grill. A 1 lb. piece requires 5 – 7 minutes on each side. The fillet is turned over one time during the grilling process.

Grilled Sockeye Salmon is definitely a healthy favorite of ours. Served along with a microwaved "Baked Potato", sauteed Summer Squash and sauteed Zucchini (Sauteed Combo) dinner will be eaten quickly. Yummy!

Have you prepared Sockeye Salmon using this method? How did your family enjoy it?

The Sauteed Combo (click on bolded words) can be enjoyed any time during the year, but tastes best in the summer. Zucchini and Summer Squash are now available at our local Pioneer Valley roadside vegetable stands. Local fresh produce to enjoy during the summer in Western Massachusetts served along with grilled seafood!

Enjoy!
