CranOrange Coffee Cake
!!  A slice of this delicious cake served with a small scoop of vanilla ice cream is just the best!  It's another great dessert to enjoy at this time of year.  Whole berry cranberry sauce is one of the ingredients.  Years ago when baking this cake I used a cranorange relish, but now I use the whole berry sauce and orange extract.  I also use my Tube Pan rather than my Bundt pan.

This CranOrange Coffee Cake is another yummy dessert that can be baked early.  After the cake cools completely wrap it in foil and place it in the freezer.  The day before you plan to serve it, defrost and drizzle the cake with the Almond Icing.

Best Sour Cream Sugar Cookies

It's that time of year! The time of year to bake a batch of Best Sour Cream Sugar Cookies!  You know, the sugar cookies that are made with sour cream and there's also a hint of nutmeg with every bite.  I have been baking a batch or two of these cookies at this time of year for ... well... 4 decades.  Four decades?  You may ask that question. It is true! 4 decades.

These cookies are just the best!  The easy part about baking a batch is that the dough is prepared one day- on Day 1. Then wrapped and placed in the fridge overnight.  The next day- on Day 2- take out your rolling mat, your rolling pin, cookie cutters and colored sprinkles.  You are ready to go!  Every year before the holidays I bake a batch in December.    

After baking and the "taste test" has happened some of the delicious cookies are placed in our cookie canister.  Not too many.  Most are stacked and placed in freezer bags to be labeled/ dated and stored in our freezer.  The cookies are so yummy, we do share them with family members.

Storrowton Village Museum

This is a great time of year to visit the Storrowton Village Museum in West Springfield, MA!  Anytime I can step into a museum, it's a great day!  Sunday, we drove over the river (Connecticut River) to West Springfield.  The buildings were relocated to this location by Helen Storrow.

A Little History!
At this time of year visitors are able to visit during Yuletide.  The weekend event was open to the public, free of charge.  Visitors of all ages enjoyed walking around and into the old buildings.  It's always a treat to visit the schoolhouse.

Strolling on the grounds is always great, but after our recent snowfall it looked even more beautiful!  It's always a treat to view how the area garden clubs have decorated the houses and also the Meetinghouse.

Buttermilk Belgian Waffles

Do you have 1 and 3/4 Cups of Buttermilk in your fridge?  Do you have 1 Cup + 3/4 Cup Milk?  That small amount of Buttermilk is the beginning of a delicious breakfast!

About a month ago after opening the door to one of my kitchen cabinets, suddenly I "spied" my Belgian Waffle Maker!  It's only been "untouched" for about 6 years!  Other than taking it down when cleaning the cabinet shelves.  Remembering that I had Buttermilk in my fridge, the next step- King Arthur Flour's website.  There it was- a recipe for Buttermilk Belgian Waffles!  The photo looked so yummy & I had the Buttermilk!
  • I use King Arthur Unbleached Flour whenever I make pancakes.
  • My less cholesterol habit:  Substitute Olive Oil for sauteing & baking for Butter.
  • Another less cholesterol habit:  Rather than 2 whole Eggs, I'd use 1 whole Egg + 2 Egg Whites.
    I was on my way to make a very yummy breakfast.  By using the Olive Oil, no butter/ margarine was needed at our table either- only a topping.  What delicious waffles!  The second time I prepared these waffles for breakfast, defrosted strawberries were a great topping!
     
    No, we did not devour the entire batch!  The extra waffles were cooled & wrapped in plastic wrap/ placed in Freezer bags for even quicker breakfasts other mornings.  My method of reheating:  my microwave.

    The holidays are in our future!  If you are looking for a quick, easy & absolutely yummy breakfast to serve your overnight guests Buttermilk Belgian Waffles are great!  Take out your waffle maker!  If you don't have one, that small appliance would be a great gift to receive!  My waffle maker is at least 15 years old.  Make & try these.  They are so good!

    Buttermilk Belgian Waffles
                 makes 8 Waffles
                 adapted from King Arthur website

    Ingredients:
    1 + 3/4 Cup King Arthur Unbleached Flour
    4 teaspoons Sugar
    2 teaspoons Baking Powder
    1 teaspoon Baking Soda
    1/2 teaspoon Salt

    1 Whole Egg + 2 Egg Whites
    1 + 3/4 Cups Buttermilk or 1 Cup Buttermilk + 3/4 Cup Milk
    1/2 Cup Olive Oil for sauteing & baking 
    2 teaspoons Vanilla

    PAM

    Method:
    1. In a large bowl combine Flour, Sugar, Baking Powder, Baking Soda & Salt.
    2. In a smaller bowl beat 1 Egg + 2 Egg Whites.
    3. Add Buttermilk, Olive Oil & Vanilla.
    4. Add liquid ingredients to dry ingredients, stirring until almost smooth.
    5. Spray Belgian Waffle Maker with PAM before preheating, only when making 1st waffle in batch.
    6. When Waffle Maker is hot, use 2/3 Cup batter to make waffle.
    7. Close lid. Cook for 2- 3 minutes - until steaming stops.
    8. (With my Belgian Waffle Maker cooking time is 2 Minutes, 30 Seconds.)
    9. Carefully remove & continue.
    ***One AM I had only 1 Cup Buttermilk, so I also used 3/4 Cup Milk & the waffles were also oh, so good!

    Using the Olive Oil, no butter/ margarine is needed.  Maple syrup or Strawberries are our fave toppings!  What will yours be?

    The Bugs/ Turkeys Table Runner

    Whenever I stop into my local Jo-Ann Fabric Store for a specific sewing notion, the vast choice of colorful seasonal whimsical fabric always catches my eye.  One time last summer 1 yard of comical bugs fabric on the bolt was added to my purchase.   Into my stash pile it went.  Now, the bugs fabric and also 1 yard of comical turkey fabric have been combined for a very handy table runner! 

    Whenever our young grandsons "bring" their parents over (as our son phrases it), one of my many whimsical table runners cover our coffee table.  My African Violets and other treasures find a spot on the mantle and our coffee table becomes a workstation.  One must be realistic... African Violets do not rate as high as Thomas the Train and Percy or Duplos do...to a toddler.  Last Saturday "the bugs" table runner covered our coffee table.  During Thanksgiving time, the flip side of "comical turkeys" will be used!

    The pattern for a table runner was simple to make.  It was made to order.  Newspaper, scissors, a tape measure and scotch/ masking tape was used.  My Janome was ready!  Now, I use the newspaper pattern over & over again whenever I sew another whimsical table runner.

    Coffee Table Runner

    To make Pattern:
    1. Measure table dimensions.
    2. Subtract 1 and 1/2 inches on each side.
    3. Make pattern from old newspaper using those dimensions.
    4. Fold newspaper pattern in half lengthwise.
    5. Fold in half, again.  There will be 4 quarters.
    6. Cut desired triangle from corners. (This gives the table runner an interesting shape rather than a rectangular shape.)
    7. Place paper pattern on table and re-size, if needed.
    8. Cut two pieces from desired fabric.  *I always wash/dry fabric first.
    9. After cutting out, pin "right" sides of fabric together.  Leave 3" opening for turning fabric right side out.  Stitch using 1/4" seam.  (I also zigzag raw edges.)
    10. Turn right side out and press.  Also press raw edges of opening in, to get ready to finish off. 
    11. Stitch small opening closed.
    12. For extra body, I mark/ pin & topstitch 3" from edges on all sides.  
    13. Optional:  Topstitch again 2" or 3" from first topstitching.
    14. Press when finished.
    ***With the Bugs/Turkeys Table Runner, I wanted the comical characters to be visible to the little guys on the two long sides of the coffee table - it would always be facing them.  For that reason, I cut the 1 yard of fabric in half and then sewed the two halves together, with the 2 halves facing opposite directions.  Other wise, it would be upside down on one side of the coffee table, if left as one large piece.  This was done before Step 8.  I prepared the turkeys fabric in the same way before cutting the pattern out.

    Last weekend the Bugs were out!  The Turkeys are on the flip side of the table runner.  They will be used in November!  As time goes on, I see Math & Spelling lessons happening!  Once a teacher, always a teacher!  :)

    Now, I'm back to working on my Envelope Pillows!

    CranOrange Coffee Cake

    There is only one way that my family enjoys Ocean Spray Whole Berry Cranberry Sauce - and that's in CranOrange Coffee Cake!  Enjoying a slice of this moisty colorful cake after dinner on Christmas Day has become a tradition.  During the holiday season it can be baked early on, cooled, wrapped in foil and placed in the freezer.  Then, the day before serving, this cake (that is baked in a Bundt or Tube Pan) is defrosted and an Almond flavored icing drizzled over the top.  Yum!   

    Years ago, I used Ocean Spray CranOrange Relish when preparing this tasty dessert.  Since I no longer can locate this item in grocery stores, the Whole Berry Sauce combined with 1 and 1/2 teaspoons of Orange Extract works very well.
     
    Ready for the oven
    I try to use less Whole Eggs when baking, so rather than use 2 Whole Eggs, I use 1 Whole Egg + 2 Egg Whites in the batter.  1 Whole Egg = 2 Egg Whites when baking.  Fat Free Sour Cream is also an ingredient.  The recipe for our favorite cake is below. 

    CranOrange Coffee Cake  printable Recipe Card

    Oven: 350°F

    Time: Bake 55 Minutes or until cake tester or toothpick comes out clean.

    Ingredients:
    1 Stick (8 Tablespoons) Unsalted Margarine/Butter, softened
    1 Cup Granulated Sugar
    1 Egg + 2 Egg Whites (or 2 Whole Eggs)
    2 Cups Flour
    1 teaspoon Baking Powder
    1 teaspoon Baking Soda
    1/2 teaspoon Salt
    1 Cup Fat Free Sour Cream
    1 teaspoon Almond Extract
    *****
    8 ounces Whole Berry Cranberry Sauce Plus
    1 and 1/2 teaspoons Orange Extract

    OR 1 container CranOrange Relish

    Method:

    1. Spray 9" or 10" Bundt Pan or Tube Pan with PAM & flour.
    2. Preheat oven to 350°F.
    3. Using mixer, Cream Margarine/Butter with Sugar.
    4. Add 1 Whole Egg + 2 Egg Whites (or 2 Whole Eggs) and blend well.
    5. Add dry ingredients alternating with Sour Cream.  End with the dry ingredients.
    6. Add Almond Extract.
    7. Combine 8 ounces Whole Berry Cranberry Sauce with 1 and 1/2 teaspoons Orange Extract in separate bowl (if using).
    8. Place 1/2 of batter in Bundt Pan, spread evenly.
    9. Top with 1/2 of Sauce, spread.
    10. Carefully add remaining batter, spread.
    11. Follow with remaining Sauce, spread.
    12. Bake at 350°F for 55 Minutes or until cake tester or toothpick comes out clean.
    13. Cool on wire rack for 5 Minutes.
    14. Remove cake from pan and cool.
    15. After cooling, wrap in foil and freeze until needed.
    The day before CranOrange Coffee Cake will be served, defrost and drizzle with Topping.

    Topping:  Blend 3/4 Cup Confectioner's Sugar, 2 Tablespoons Water + 1/2 teaspoon Almond Extract until smooth. 

    Every year we enjoy this delicious CranOrange Coffee Cake with an Almond Icing!  And...a small scoop of vanilla ice cream on the side!  The beginning of this week my "to do' list includes baking and freezing our Christmas cake.

    A Quick Yummy Dinner!

    Preparing for the holidays keeps all of us busy! One project is underway and another seems to be in the forming stages. It certainly keeps us moving and humming along. Yesterday, decorating the new small artificial trees for our front doorstep required using my hubby’s Workshop.





    Now, I am very acquainted where everything is located in my Kitchen and in my Sewing/Computer Room. However, I usually do not venture into the Workshop, so I can never easily locate the glue sticks and the glue gun. Actually, the easier method was to ask for help in locating everything I needed, because I also wanted to use my hubby’s large workbench.







    After my Christmas trees decorating project was completed, it was time to start dinner.

    Earlier in the day Sea Scallops were purchased at our local grocery store. It was frigid outdoors, but the aroma of Pan Seared Scallops (click here) on my stove reminded me of the warm days of summer. The “Baked Potatoes” were in the microwave and a nutritious, colorful veggie salad was already on the table. A yummy dinner was ready quickly! Do you also enjoy preparing and eating Seafood during the colder months?

    After dinner my knitting needles were clicking away making progress on the black knitted hat! Are you working on projects for the holidays?

    Holiday Cookies

    At special times of the year do you bring out the Colored Sugars, a Rolling Pin and many cookie cutters? While glancing through pages in magazines or while watching food shows on t.v. you may get the urge to roll out, decorate and bake cookies.

    For about three decades I have been making Sour Cream Sugar Cookies. Goodness, it has been that long! (Click here for printable recipe card.) These cookies are made in two steps. The result is an absolutely delicious, soft, cutout cookie with a hint of Nutmeg.

    The dough for these Sugar Cookies is prepared on Day 1. After making the dough wrap it in plastic wrap and then in foil. Place the wrapped dough in the fridge. The next day – Day 2 - the dough is rolled out. Using your Rolling Pin and favorite cookie cutters a batch of delicious homemade holiday cookies will be ready!

    After you bake these yummy Nutmeg flavored cookies, they can be cooled and placed in your freezer. When the holiday arrives defrost them. Your family and friends will enjoy eating these scrumptious treats. With Christmas just around the corner, I need to get busy and bake a batch this week! After we eat a few, most of them will be located in my freezer until Christmas arrives.

    The “Sharp” Shopper

    Currently, it is about one and one-half weeks before Thanksgiving! While browsing through the grocery store sales flyers, advertised specials are spotted. This is a great opportunity to purchase the baking staples that will be used in the next few weeks for preparing food for the holidays. The brands and sizes that I use of Flour, Sugar, Chocolate Chip Morsels, Light/Fat Free Chicken Broth, Spices, and Evaporated Milk will be on sale. Yes, I also clip, save and use coupons. Do you? How sweet to use a coupon on an advertised special!
