A Quick Glance

It's March and our thermometer reading was 73 degrees this afternoon.  A quick walk around our yard brought the views of flower buds in the gardens.  Hyacinth and Daffodil flowers will be making their appearances.  The Crocuses are blossoming, now.  This may be a tease, but the warm weather and cheeseburgers on the grill tonight are signs of Spring!!

Best Irish Soda Bread

Add unsalted Butter, Buttermilk and Raisins to your grocery list this weekend! It's time to get ready to bake a delicious Irish Soda Bread!  Yes, they can be purchased, but this Irish Soda Bread is filled and I did write filled with moisty Raisins.  Every bite is just so yummy!  This is by far the best Irish Soda Bread that I have ever tasted!  I had used other recipes in the past, but they always were d- r- y.  And, they did not contain enough Raisins.  

Quite a few years ago I "googled" to find what recipe I could come up with.  I did not expect to find much, because I only had 1 Cup of Buttermilk to use.  To my surprise I found a blog with an Irish Soda Bread recipe that required that 1 Cup of Buttermilk.  It was so very easy to prepare.  It had so many Raisins, too!  I was hooked.  I baked it and boy was it delicious!  This recipe is just the best!  I have never searched for another!

Click on this link for the recipe with all of my hints!  The complete story, too!  You will be very happy you did!  I have learned that slices of this Irish Soda Bread freeze very well!  This delicious bread is also a wonderful treat to bake, cool and mail to our sons- for St. Patrick's Day or other special occasions.  You guessed it!  It is a family favorite!  Did I mention that it is easy to prepare??  It is!!

Yesterday, the Buttermilk was purchased for my St. Patrick's Day Irish Soda Bread baking.  Slices will be on our breakfast table on March 17th!  Heated in the microwave for a few seconds- ah, YUM!!  Bake one this year!

Every year on this day I post a Happy Birthday to Springfield, MA's favorite author, Theodor Seuss Geisel.  He was born on this day, March 2, in 1904.  Mr. Geisel wrote so many interesting stories for children (of all ages) using the name Dr. Seuss.  Seuss was his mother's maiden name.  Many of the stories are comical and filled with the history of Springfield, MA during his childhood.  The Indian Motocycles (Yes, that was the correct spelling when they were first manufactured in Springfield.) and the Forest Park Zoo (His dad was the superintendent of that zoo.) were included in his books.

Super Bowl Chili

Super Bowl Sunday is this weekend! Every year on that special Sunday we enjoy Chili for dinner! Delicious, hot, flavorful Chili!  Definitely it's served with a dollop of Sour Cream on top.  The Sour Cream is stirred in just before enjoying that first spoonful of this yummy meal.  Cannot forget a slice of Rye or Oatmeal bread for dunking into the tasty tomato sauce.  It's all part of the enjoyment of eating Chili! 

This is a very easy dinner to prep in a Slow Cooker or in a Crock Pot.  I have a Slow Cooker that comes in so handy any season during the year.  My Slow Cooker has a non stick pot, BUT I have learned that meats/ poultry can overcook/ burn on the very bottom.  For that reason I place the Green Pepper that has been cut into chunks on the pot's bottom. 

Sometimes, I prepare Chili using ground beef and at other times I use ground turkey.  I do not notice any difference in the Chili's taste when using either.  It's spicy, so either works.  Lately, I've been using the ground beef, because the date on the ground beef package (when we purchase it) is better.  Grocery shopping has definitely changed for us during this pandemic.  I plan for more than a week's meals when writing out the grocery list.      

Yesterday, I made a batch of my Chili.  It was so good!  I have also learned that Chili freezes very well!  The extra portions were placed in freezer containers and into the freezer they went.  You guessed it!  On Saturday, which is tomorrow, I will place a large container of my Chili in the fridge to begin defrosting overnight.  On Sunday it will be reheated for dinner.  It's really great to have Sunday's dinner in the freezer!  Yes, we do have the Sour Cream and Oatmeal bread, too.

Top Post of 2021!

Tonight's dinner is baking in our oven.  It is also the top blog post that I wrote for last year- in 2021! Drum roll here,
da dum... Baked Taco Pie!

Ground Beef, corn, diced tomatoes, tomato sauce and shredded cheeses layered between tortillas. Oh, there are herbs and spices in the mix, too. It's served with a dollop of sour cream. Oh Yum!

We have extra portions, so they always have a spot in our freezer for a quick and easy future dinner.
