Strawberry Simply Delicious

Strawberry Simply Delicious!
This is a perfect dessert on a hot day and it is hot today!  This dessert is refreshing and so good!  It's Simply Delicious!  There are only 3 ingredients needed:  a box of flavored gelatin, vanilla ice cream and water.  Oh, whipped cream on top is added, so I guess 4 ingredients are needed.

The water is boiled, the gelatin is added and stirred in.  Then, the ice cream is stirred in, too.  Actually, I whisk it in, so everything is combined quickly.  Then, pour into dessert dishes or coffee mugs and refrigerate for a few hours.   Lime flavored or Strawberry flavored are our favorites.  Lemon or Raspberry flavors are delicious, too.  My gelatin of choice is JELL-O!  If I have strawberry ice cream in our freezer, I combine it with the strawberry gelatin.  I will be whipping up a batch this afternoon to enjoy tonight after dinner.  So good!!

Strawberry Simply Delicious

Yesterday it was official!  Our 1st heat wave!  This AM when our outdoor thermometer read 90.5°F, our thoughts were that we did not want a fourth day of 90°F + temps.  A tad too early!

However, with the sun shining brightly, the Zinnia seeds have burst upward!

Our Dogwood Tree outside my Computer/ Sewing Room is looking good!  The branches are filled with these pink edged ivory flowers.

When the weather suddenly gets warm, a cool easy dessert tastes so good!  Simply Delicious!  This particular dessert contains 3 ingredients:  1 Cup of Vanilla Ice Cream, 1 small box of (your favorite flavor) Jell-O Gelatin and 1 Cup boiling Water.

 Sugar Free Jell-O works great!

***Last summer this dessert was a hit at our Family Get-Together with the toddlers in our family.  1- Cup Ziploc containers had either Strawberry, Lime or Lemon Simply Delicious.  A squirt of Reddi-wip on top and the little tykes were very happy!  The Ziploc 1- Cup containers were easy to stack in the fridge after filling them - just remember to leave a little "head space" before placing the lid on top.  A FuN dessert for children of all ages!  :)

~Creamy Cheesy Pie~

It's very peaceful...listening to the water trickle down into the gutters as the snow on our roof melts.  Today it was 40°F and the bright sunshine filled my Computer/ Sewing room as I was typing.  Yesterday, my hubby used our Snow Rake to remove snow from the edges of our roof.  We are not looking for a repeat of the winter of 2011!  The water moving downward is a welcoming sound today.

Tomorrow is a day of FuN!  It's always great to make a fave dessert for Valentine's Day!  So many to choose from.  Suddenly, the vision of a Creamy Cheesy Pie appeared!  It's an easy dessert that my mother-in-law tempted me with so many years ago.
Ingredients
We were visiting in the sunny state of FL during the winter.  The week before I had baked a delicious creamy Cheesecake.  Much Cream Cheese, Sugar, a homemade crust, and much prep time in my creation.  After sampling the first bite of her treat, I knew I'd never spend that much time again using my recipe.  Hers was so easy...hers was so tasty...hers was a lot less effort!  It was delicious!  From that time on I make it for a special occasion.  Valentine's Day is definitely a special occasion this month!

Creamy Cheesy Pie

Ingredients:

(1) small pkg. Cook & Serve Vanilla Pudding Mix
(1) pkg. 8 oz. Cream Cheese
(2) Cups Milk
(1) Pre-made Graham Cracker Pie Shell

Method:

  1. Prepare Pudding according to package directions.
  2. Place Cream Cheese in a medium bowl.
  3. Pour hot Pudding over Cream Cheese and whisk until smooth.
  4. Pour mixture into Graham Cracker crust.  Smooth mixture to crust edges.
  5. Cool - maybe 30 minutes and cover with plastic wrap.  I leave small amount unwrapped on edge.
  6. Refrigerate overnight.
  7. Cut into slices.  Add whipped cream on top.
  8. Place berries on the side.
  9. Refrigerate remaining pie to enjoy again.  Yum!
  • My family uses 1% Milk, so I add 1 Tablespoon powdered milk into pot before making pudding.
  • Sometimes I substitute Neufchatel Cheese for Cream Cheese.
  • I use Jell-O brand pudding mix, because when using the Jell-O brand I do not burn the bottom of the pot.  :)

My older son has made a Chocolate Creamy Cheesy Pie - using Chocolate Cook & Serve Pudding

Happy Valentine's Day!!!

Enjoy!
Yummy!

Lime Simply Delicious

Ready to be placed in the fridge!
Just the thought of anything lime flavored sounded refreshing, cooling and so good on this HHH day.  I was in the kitchen waiting for the milk to come to a boil for my double batch of yogurt.  It's quite messy if the milk does boil over the top of the pot, so the "watch detail" was in progress.  You know...a watched pot never boils...

Suddenly, Lime Simply Delicious came to mind.  Friendly's Vanilla Ice Cream was in the freezer and I only needed 1 Cup.  A package of lime flavored JELL-O was located in my cabinet.  This could only mean one thing - an easy to make, delicious, light dessert after dinner.

Pudding Pops

Pleasingly plain Pudding Pops!  On a warm ... o.k.... hot day opening the freezer door and locating refreshing Vanilla Pudding Pops even sounds like a cool idea.  It sure is an easy idea.  My Tupperware molds, 1 box of Cook & Serve Jell-O Pudding and 2 Cups Milk were located and I was on my way.  After the pudding was prepared and it cooled a few minutes, I poured it into the molds.  Snap on the tops and place in the molds' tray.  After a few hours in the freezer a refreshingly cold dessert awaits!

This summer I've seen "pop molds" in the kitchen depts. of various stores.  Mine were purchased years ago.  They sure do come in handy.  (Grape Juice makes yummy purple pops!)

I use Jell-O brand Cook & Serve pudding for a simple reason - when using this brand I do not burn any pudding in the pot.  No need for that for me.  :)

Time to make more Pudding Pops!  Maybe chocolate!
Enjoy!
Yummy!
