Oatmeal and Cholesterol

Four months ago I was advised that I needed to LOWER my cholesterol, so I started to pay more attention to the Oatmeal commercials on television. We have all seen them … an individual proudly states that he/she has eaten a serving of oatmeal cereal every day for 1 month and the result is a lower cholesterol reading. Knowing that I would tire of that particular breakfast every day, I decided to eat oatmeal every other day. My breakfast would be either “Creamy Cranberry Oatmeal”, Creamy Oatmeal made with raisins or Awesome Oatmeal Pancakes. After eating this breakfast for 3 months, I, JG, am a believer! I can proudly state that I have lowered my cholesterol 23 points in 3 months by eating a breakfast with oatmeal every other day! WOW!! And … I am still enjoying my healthy oatmeal every other day.

Sassy Raisin Sauce

Easter Sunday is quickly approaching! For those of us who will be preparing a family dinner on this special day, grocery lists are getting longer. A delicious touch to a Baked Ham Dinner is Sassy Raisin Sauce. The ingredients for this simple and tasty sauce are found in your kitchen.

For about 2 ½ Cups:

Measure 3 TBS. Cornstarch into a small saucepan. Slowly, stir in 2 Cups Apple Juice. Add 2 TBS. Butter/Margarine. Add 1 Cup Raisins. Stir constantly while cooking over medium heat. The sauce will thicken and boil. Boil and stir for 1 Minute.

For 2 Servings follow the directions above, but use:

1 TBS. Cornstarch
2/3 Cup Apple Juice
About 1 TBS. Butter/Margarine
1 Handful Raisins

“Unreal Egg Salad” Sandwich

I discovered an “Unreal Egg Salad” Sandwich made with cinnamon raisin bread is fantastic! The “Unreal Egg Salad” is actually firm tofu that has been cut into very small pieces. For two sandwiches - After cutting the desired amount of tofu, (about a 1” slice cut into small pieces) place in a small bowl, add about ¼ tsp. dry ground mustard (found in the spice aisle of a grocery store) and about 1/8 tsp. paprika and desired amount of mayo. Mix all well. Spread the tofu salad on Thomas’ Swirl Cinnamon Raisin bread. The bread slices are thick and make an excellent sandwich.

After opening the tofu package, cut the desired amount of tofu to be used. Place the remaining piece in an air tight container, cover with cold water, place lid on and refrigerate. Change the water every day. Tofu lasts 5 days. See instructions on keeping tofu fresh.

Surprise your family and do not tell them that this is tofu. It is delicious!
