Butternut Squash Pancakes

It's the time of year when I make a batch of Butternut Squash Pancakes for breakfast!  Enjoying these delicious pancakes that have Cinnamon, Nutmeg and Ginger is a tradition, especially in Autumn.  While prepping the Butternut Squash for the freezer two days ago, I saved out 1 Cup to make these.  The next day we enjoyed Butternut Squash Pancakes for breakfast.  They are so light and are so yummy! 

After enjoying our breakfast, there were many left to freeze.  Did I mention that they freeze very well??  They do!!  It's always great to open the freezer door to find a Ziploc bag or two of frozen pancakes.  (I was quick to freeze them and did not take a current photo, but luckily I had one to use today.)

**When freezing pancakes after they cool, I place half of the pancakes individually in sandwich bags and half are not placed in the bags.  Then, I stack them- every other one is in a sandwich bag.  In this manner they do not stick together and it's easy to remove the needed amount later.  I also save on using too many of the sandwich bags.  The pancake stacks are then placed into Ziploc Freezer bags and into the freezer they go.  Easy breakfasts for other mornings!    

Thanksgiving Day will be celebrated soon and you will probably be enjoying Butternut Squash on your dinner table.  We will be!  Save out 1 Cup to prepare these delicious pancakes for breakfast.  A few years ago I posted my recipe on my blog.  It is a click away and well worth the click!

Apple Bread

Desserts with apples as the special ingredient are always a great treat!  Especially in autumn when the newly harvested fruit is available.  One of our favorite treats is Apple Bread.  This is a yummy, moist dessert bread filled with chunks of apples.  A surprising ingredient is orange juice.  This gives the bread a great flavor!

I always bake two of these breads- one to enjoy and the other is cooled/ wrapped in foil and placed in our freezer.  Currently, there's an Apple Bread in the freezer that we will be enjoying over the Thanksgiving Day weekend.  When it comes out of the oven there is always a crack in the center.  Yet, still, I use my cake tester to learn if the bread is ready for the cooling rack. 

If you have never baked one (or two) of these breads, add apples to your grocery list.  Then, take out your bread pans and you will be on your way!  It is that good!

Apple Bread

Oven: 350°F    Time: 65 Minutes    
**Makes Two Loaves

Ingredients:
4 Cups Flour
2 cups Sugar
1 & ½ teaspoons Salt
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Cinnamon
1/8 teaspoon Nutmeg

2/3 Cup Olive Oil (for baking & sauteing)
2 Cups Orange Juice
4 Egg Whites
2 Cups finely chopped peeled Apples (5- 7 Apples depending on
     size)  Cortland or Empire Apples are my faves to use.

Method: 
  1. Combine dry ingredients in a large bowl.
  2. Add Olive Oil, Orange Juice & Egg Whites (slightly beaten)
    and stir.  
  3. Add chopped apples and stir in.
  4. Pour batter into greased bread pans.
  5. Bake at 350°F in preheated oven for 65 minutes or until cake tester or toothpick comes out clean when inserted in middle of loaf.
  6. Cool on wire racks for 10 minutes.
  7. Remove from pans and continue cooling on wire racks.
After the breads have cooled we always want to "taste test"!  One bread is placed on a serving dish and slices can then be enjoyed.  The other bread is wrapped and placed in our freezer.  It is hard to resist the temptation to defrost that apple Bread that is sitting on the shelf in the freezer.  :)

Butternut Squash Bread – Another Tradition!

The chilly October mornings are here! Maple trees are adding beautiful colors to our neighborhoods. Our local news is filled with stories of visitors enjoying picturesque New England in the autumn. We residents need only to venture outdoors while completing errands to relish the scenery.

With this season comes pumpkins and varieties of squash and cabbages. Yesterday, after preparing the local Butternut Squash for our freezer, I saved two cups of the mashed orange cooked vegetable. Later in the day, the squash was used in making Butternut Squash Bread.

I continue my family’s tradition of using Butternut Squash as an ingredient in bread rather than steaming a pumpkin or using canned pumpkin. The delicious taste of a slice of Butternut Squash Bread is difficult to resist. Click here for recipe card. Now, I substitute Olive Oil for vegetable oil while cooking, so I now use Olive Oil as an ingredient rather than vegetable oil in this yummy bread.

This recipe yields two breads. Cut the ingredients in half if you wish to bake one bread. However, this bread freezes very well, and it is a welcome sight in my freezer when we locate a homemade, made from scratch dessert ready to be thawed and served. And … it makes a great surprise for an out of town guest!
